Ina Garten shares a tip for her crispy chicken recipe

“I love the way Italians cook chicken breasts al burro, which means ‘in butter’. And we know what I think about butter, ”said the Food Network host. “Taking this inspiration from, I make crispy chicken breasts with lemon orzo. It’s the perfect combination.

Garten dragee chicken breasts with the skin in flour seasoned with salt and pepper. “And the reason I dip it in flour is that the outside will be really dry,” she explained. “And that’s going to catch on very well. You want a really nice crust on the outside. That’s why I call it crispy chicken.

She coated both sides, then placed it skin side down in a hot pan with canola oil and European butter. Garten explained that the butter has “low water content” so he “knows very well” which results in a perfectly crispy chicken.

“When I sauté something in butter, I always add oil to it – canola oil,” she said. “So you have the higher burning temperature of the oil but still the flavor of good butter. “

Ina Garten uses a “trick” to cook her chicken recipe

Garten shared the process of cooking chicken: baking it on the stove, then roasting it in the oven, then putting it back on the stove. She also shared her easy “trick” that makes all the difference.

Garten placed the pan in a 450 degree Fahrenheit oven for 10 minutes. When she took the pan out of the oven, she noted, “And that’s why I cook it on really high heat. It really grabs in the chicken juices and flavor. It’s just fabulous.

The barefoot countess star placed the pan on a burner and turned the chicken over to cook the other side. “But wait and see what I do next,” she teased. “I’m going to put in more butter… that will make it even better.”

While the chicken was roasting in the oven, Garten was cooking the orzo. She added salt to the boiling water, poured out the orzo, and brought the water to a boil. Then she simmered it uncovered for 10 minutes.

After Garten drained the orzo, she added it to a bowl with lemon zest, lemon juice, salt, pepper, olive oil, feta cheese and dill. fresh and mixed everything up.

“You really want to do it when it’s hot because then all of that flavor gets absorbed into the orzo,” Garten explained.

She sprinkled fresh parsley over the chicken, then sliced it on the bias and placed it on a plate. Garten added orzo to the plate and gave it a squeeze of lemon juice. She poured the sauce from the pan over the chicken for added flavor.

“And that’s how Italians make comfort food,” Garten said before taking a bite.
